Chocolate Muffins with Peppermint Buttercream



  • 2 cups All Purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup milk (dairy or nondairy)
  • 1 tsp vanilla
  • 2/3 cup cocoa powder


  • 1/2 cup butter
  • 2 cups confectioner sugar
  • 2 tbsp cream (dairy or nondairy)
  • 2 tbsp crushed peppermint pieces
  • 2 tsp vanilla


Preheat oven to 375 F.  Cream butter and sugar in a large bowl.  Add eggs and vanilla.  Add all dry ingredients in a separate bowl, then slowly combine dry and wet ingredients.  Place mixture into a greased or lined muffin tin.  Bake for 18 minutes.  While cupcakes are baking, cream butter and confectioner sugar.  Slowly add in cream, vanilla and peppermint pieces.  Remove cupcakes from oven, and let cool to room temperature before frosting (about 30 minutes).  Frost cupcakes, add any decoration, and enjoy!
